Smoked BBQ Apple Pork Chops

I made this dish a few nights ago for hubby and I, of course the pups had a chance to try it also. It ended up being a fan favorite for all! This is super easy and makes for a quick, but savory meal after a long day of work. I used a store bought BBQ sauce since I didn’t have time to make my own. I used the Guy Fieri brand because it is low in sugar.

Ingredients:

4 Bone-in Pork Chops

1 Honey crisp apple

½ Red onion

Smoked Apple BBQ sauce (if no time to make my own, I use the one made by Guy Fieri)

Salt to taste

Pepper to taste

Olive oil

Instructions:

Preheat oven to 400 degrees F. Generously season both sides of all 4 pork chops with salt & pepper, then in a warm skillet (medium-high heat) add a thin layer of EVOO. Place 2 of the chops in the skillet and cook each side for about 2-3 minutes until golden brown then repeat for the remaining 2 chops. Peel and slice apple into thin pieces and place in pan on medium heat to warm them. Once they are warmed and starting to soften, add about 2 tablespoons of BBQ sauce to pan and continue cooking until very lightly browned. Slice the red onion into thin strips and scatter them and cooked apples along the bottom of a roasting pan. Place all 4 chops on top of onion and apple pieces and generously coat chops in smoked apple BBQ sauce. Bake for about 30-35 minutes until pork is cooked (145 degrees in the warm center) and onions are soft.
