Grilled Vegetable Medley

1 medium zuchinni (green squash)

1/2 medium sweet onion

1/2 orange bell pepper

3 small vine ripe tomatoes

1 1/2 tablespoons butter

1 teaspoon olive oil or basting oil

salt to taste

pepper to taste


Warm grill to medium heat. Peel and slice zucchini into long quarters. The half onion, half pepper, and tomatoes remain whole. Place all vegetables face down (cute side down) on top rack of grill. After about 5 minutes, turn once. Remove vegetables as they become tender and have visible grill marks. Chop all veggies to desired size and place on aluminum foil. Add butter, oil, salt, and pepper and wrap up veggies with foil like a covered bowl. Place on grill for another 7-8 minutes, keep veggies covered with the foil, and set aside until ready to serve.
