Avocado salsa is a great summer side or a perfect topping for blackened fish!
Ingredients:
1/2 ripe Avocado cubed
1/4 medium sweet onion chopped
1 plum tomato chopped
Salt to taste
1 teaspoon extra virgin olive oil
1 tablespoon fresh lime juice
Instructions:
Cut the avocado into small cubes, chop onion and tomato into small pieces, and mix together with salt, EVOO, and lime juice.
