Turkey Bacon Egg Cups

These little cups are great for a healthy breakfast on the go and loved by both kids & adults! I usually make 12 at a time and then store in the fridge for the week. The best part is you can add in your favorite veggies or additional ingredients to make them your own.

Ingredients:

12 large eggs

1 lb turkey bacon

1/4 cup shredded cheddar cheese

Instructions:

Serving size = 12

Preheat oven to 375 F. Spray cupcake tin with nonstick cooking spray and cut entire package of turkey bacon in half. Line each cup with 3 pieces of bacon (1 across the bottom and 2 along the sides). Crack 1 egg into each cup and top with some shredded cheddar cheese. Bake in oven for about 20 minutes, bacon should be crispy and egg will be the same consistency as hard boiled.

Keep refrigerated after cooking and best served warm.
