Toasted Almond Rice Pilaf

Spice up your rice with this flavorful twist!


2 tablespoons almond slices

2 tablespoon butter

1.5 teaspoon olive oil

1/4 sweet onion chopped

Salt to taste

Pepper to taste

1 & 1/2 cup of rice (white or brown)

2 cups chicken stock

2 tablespoons green onion chopped


Serving size = 4

In a sauce pan over medium heat, toast 2 tablespoons of almond until golden brown and then set aside. In the same pan, melt butter, then add olive oil, chopped onion, salt and pepper together and cook over medium heat until onion is soft. Add rice and chicken stock to onion mixture and cook until rice is tender, stir in chopped green onion before removing rice from pan. Sprinkle toasted almond pieces over rice and serve.
