Smashed Sour Cream & Chive Potatoes

Sour cream and chive gives a smooth creamy texture and mildly sour earthy taste to enhance those red skinned potatoes.

Ingredients:

3 Red skin potatoes

2 tablespoons of butter

4 tablespoons of sour cream (can substitute with light)

2 tablespoon fresh chopped chives

Salt to taste

Pepper to taste

Instructions:

Rinse, cut potatoes in half, and then into quarters leaving the skins on. Boil pieces in water with salt until very soft, then drain. With a hand masher, smash the potatoes until about ¾ is smooth, leaving some chunks for texture. Add 2 tablespoons of butter, salt, pepper, sour cream, and fresh chopped chives, mix well.
