Sausage, peppers, and onion is a great summer dish and adding potatoes makes it complete.
Ingredients:
1 package of sweet Italian pork sausage ( I used a large pack with about 14 links)
1 large sweet onion sliced thin
1 large yellow bell pepper chopped
1 large orange bell pepper chopped
1 large red bell pepper chopped
6 red skin potatoes quartered
3-4 tablespoons butter
Salt
Cracked pepper mixture (McCormick- contains black, white & red pepper)
1/2 tablespoon sunflower basting oil
Instructions:
Serving size= 6-8
Wash, peal, and cut potatoes into quarters then boil until tender but not very soft. Meanwhile, in a large skillet over medium heat, saute onion and peppers in 2 tablespoons butter, basting oil, salt, and pepper until soft. Grill sausage over medium heat until outside is browned and inside is no longer pink (you can cook these on the stove as well, but the grill is less of a mess and faster). Once potatoes are cooked drain and set aside. Mix in sausage with peppers and onions. In an oven safe dish combine sausage, peppers, onion, and potatoes; top with more butter, salt and pepper. Bake for about 10-15 minutes covered on 350 degrees F. Mix well and serve.
