I love to cook and spend time in the kitchen, however there are some days that I just want to make something quick and spend my night outside when the weathers nice. While I was doing my regular weekly shopping on Sunday, I spotted this delicious Roasted Red Pepper Vinaigrette and figured I would give it a shot. Of course, yesterday morning I was running late and did not have any time to prep dinner, so I did a quick marinade while chopping up and grilling my veggies. It seemed to be long enough because the chicken was very tasty, sweet, and juicy. I think the juiciness has a lot to do with the type of chicken I have been buying. It is Wegmans brand organic vegetarian fed chicken breasts, which after tasting these babies I wont buy any other brand chicken. Andrew (my husband) and I had some left over chicken for lunch today, even after being reheated the chicken remained extra juicy and tender, I can’t say enough good things about it. Anyway, if you can’t find this specific marinade then I am sure any one will do, but it is definitely worth looking for.
Ingredients:
1/2 bottle of Wegmans Roasted Red Pepper Vinaigrette
3 organic chicken breasts
salt to taste
pepper to taste
Instructions:
Warm the grill and keep on medium heat. Salt and pepper chicken breast to taste then marinate in roasted red pepper vinaigrette for hours if possible, if not 20 minutes will work as well. Cook chicken on grill until no longer pink and juices run clear, basting with vinaigrette occasionally. Serve with Grilled Vegetable Medley and enjoy!!
