I am currently obsessed with these fresh fruit parfaits! They are extremely healthy, filling, meal prep friendly, and delicious.
Substitute with any fruit and nut you prefer
Ingredients: (1 parfait)
1/2 cup fresh or frozen peach slices (fresh is best, but in the winter its hard to find them)
3 heaping tablespoons of plain whole fat greek yogurt (I used Fage total)
1/2 cup dry oatmeal mix (I use a blend with crushed almonds, flax seed and cranberries. If you cant find one then you can add those ingredients in separately. I highly recommend some type of nut and super grain)
2 tablespoons of sugar free maple syrup or raw honey
Cinnamon to taste
1/4 cup wheat puffed rice
Instructions:
- In a mason jar or container with a lid, add a layer with about 1.5 tablespoons greek yogurt, 1/2 of the peaches, and 1/2 of the oatmeal mix, and then drizzle with syrup or honey
- Add a second layer in the same order
- Seal and store over night
- Top with wheat puffed rice (for crunch)when ready to enjoy and mix all ingredients together for best flavor
