This is one my all time favorite breakfasts and something I was able to put together from scratch with fresh ingredients in just a few minutes before work!
There is nothing quite like a light & fluffy, cinnamon crepe stuffed with creamy peanut butter, freshly sliced banana, and topped with a delicately sweet warm blueberry sauce. I am a foodie through and through and taste is very important me, but so is my health. I like to find creative ways to make healthy food choices taste amazing.
If your looking to satisfy your cravings, but maintain your healthy habits then this recipe is exactly what you have been looking for!
Ingredients:
Blueberry topping
1/2 cup fresh blueberries
Fresh squeezed juice of 1 orange
1/4 cup light brown sugar
Instructions:
Add all ingredients to a warmed sauce pan on medium heat. The blueberries will start to bubble and burst creating a thick sauce combined with light brown sugar. Once most of your blueberries have burst and the sauce is at a medium thick consistency it is ready to be poured over top fresh filled crepes!
This sauce is a great substitute for syrup on pancakes, waffles,and more!
Ingredients:
Crepe
1 egg
1/2 cup whole wheat flour
2 tablespoons cinnamon
Splash of vanilla extract
1/2 cup unsweetened almond milk
Instructions:
Lightly grease entire pan and turn on medium heat. Once pan is heated, fill a ladle with batter and holding pan on an angle pour the batter in so it covers the entire bottom. Once the crepe starts to bubble and brown on bottom, flip it using a spatula. Fill the crepe with your favorite fruits and/or spreads!
