This creamy cheesy pasta is a super easy and delicious recipe perfect for a weeknight!
Ingredients:
1/2 box (8 oz) of pasta
2-3 cooked and seasoned chicken breasts
2 cups fresh or frozen broccoli
2 tablespoons olive oil
4 gloves fresh garlic pressed
2 tablespoons flour
1 cup fat free low sodium chicken stock
1 cup whole milk
3/4 cup Parmesan cheese
1 cup shredded mozzarella cheese
pepper to taste
garlic powder to taste
Instructions:

Preheat oven to 350 degrees F.
In a medium pot, boil water then add about 1/2 box of ziti pasta. Drain and place in oven safe dish.
In a pan over medium heat, add 1 tablespoon of olive oil. Season both sides of chicken breasts with garlic powder and pepper, then add to warm pan. Cook until both sides are golden brown and inside is mostly cooked, but slightly pink. Cut chicken into desires sized pieces.
In a medium pot over medium heat, lightly saute pressed garlic in 1 tablespoon olive oil. Add chicken stock to pot and then whisk in 2 tablespoons flour. Next, whisk milk into chicken stock. Bring to a simmer and whisk in Parmesan cheese, be sure to mix well removing any clumps. Continue heating for another 5-7 minutes while stirring occasionally. **If you like an extra cheesy and creamy dish, you can double the Alfredo amount.
In a large oven safe dish with pasta, add par-cooked chicken, uncooked broccoli, and evenly mix in Alfredo sauce. Top with some mozzarella cheese and chopped green onion. Bake for 20 minutes covered and 5-10 minutes uncovered.
