A friend of mine shared her recipe for buffalo meatballs with me and I added a few things to make them my own. These are a real crowd pleaser and can be made with ground chicken or ground turkey. I normally serve them as a main dish with a vegetable side, but these also make great appetizers with a blue cheese dipping sauce!
Ingredients:
1lb ground chicken
1 large egg
1 teaspoon dry parsley
1 teaspoon garlic powder
1/2 cup plain breadcrumbs
1/2 cup shredded cheddar cheese
1/4 cup buffalo sauce in mixture, save extra for topping (I use Steve and Ed’s)
Salt
Cracked pepper
Instructions:
Serving size= 8-9 large meatballs
Preheat oven to 400 degrees F. In a large bowl, combine together ground chicken, egg, parsley, garlic powder, and bread crumbs. Then stir in cheese followed by buffalo sauce (this will make your mixture a bit wet, so mix well). Mix everything together evenly and then form meatballs into desired size (they will shrink a bit when cooked, so I made mine a bit on the bigger side). Place meatballs on a greased baking sheet and bake for about 20 minutes until cooked. With about 5 minutes left, top meatballs with some more buffalo sauce. Add some blue cheese or ranch as a dipping sauce is serving as an appetizer.
